- There is very little information available about Noel De Clary’s life outside of his service at the White House. Noel appears in Thomas Jefferson’s memorandum books between 1801-1803, employed as a Garçon de cuisine, or kitchen boy. He assisted chef de cuisine Honoré Julien and earned wages of $12.00 a month with a $2.00 drink allowance.1 He also received medical care at the White House in 1802. A statement of medical services from Dr. Edward Gantt, states that Noel received a venesection or bloodletting and additional medical services.2
